'A bee's existence on Earth spans only 40 days. During this short time, it visits at least 1,000 flowers and produces less than a teaspoon of honey. For us, it is only one teaspoon of honey, but for the bee, it is a lifetime. Thank you, bees!'

WHY IS MY HONEY CRYSTALLISING?
Honey crystallises because it contains more glucose than water, so there isn’t a high enough moisture content for the sugars to stay dissolved. Raw honey tends to crystallise faster than processed honey, as it retains its natural impurities and enzymes, which can accelerate crystallisation.

The good news is that this is a perfectly natural process for honey, and it is still safe and delicious to consume. However, if you prefer your honey to be liquid, you can achieve this by setting your jar in a water bath at 40 degrees or less and stirring occasionally until the desired consistency is reached. As heating honey is not recommended, this is a safe temperature to maintain invertase (an important enzyme) within the honey.
